Ingredients

  • 1/2 cup chopped roasted unsalted peanuts
  • 2/3 cup reserved mandarin orange juice
  • 1/2 cup peanut oil
  • 2 tbsp fresh lemon juice
  • 1-1/2 tsp chili oil (optional)
  • 1 tsp minced peeled fresh ginger
  • 1/2 tsp salt or to taste
  • 1/4 tsp ground Szechuan peppercorns
  • 4 cups shredded Chinese (Napa) cabbage
  • 1/2 cup chopped roasted unsalted peanuts
  • 1 cup chow mein noodles
  • 2/3 cup sliced scallions
  • 1 cup canned mandarin oranges, drained, juice reserved
  • 4 cups thin strips cooked chicken (about 1 lb cooked)

Cooking Instructions

Combine in a large bowl:

Whisk together in a small bowl until well blended:

Pour 1/2 cup dressing over the chicken mixture and toss to combine. Taste and adjust the seasonings. Serve the salad over:

Top with:

Drizzle the remaining dressing over the salad and serve.
