Ingredients

  • 1/4 cup vegetable oil
  • 2 Tbsp each sugar and cider vinegar
  • 1 Tbsp soy sauce
  • 1 tsp grated fresh ginger or 1/2 tsp ground ginger
  • 1/4 tsp each salt and pepper
  • 1 head romaine lettuce (about 1 1/4 lb), cut in bite-size pieces (about 8 lightly packed cups)
  • 3 cups (about 12 oz) large shreds cooked chicken
  • 1 cup chow mein noodles
  • 1/2 cup chopped cashew nuts
  • 1/4 cup toasted sesame seeds (see Note)
  • 2 scallions, sliced

Cooking Instructions

Whisk Dressing ingredients in a large bowl until blended.

Add remaining ingredients and toss to mix and coat.
