Chinese Chicken Salad

Ingredients

  • 5 Boneless skinless chicken thighs
  • 1 head green cabbage
  • 1 bunch Green Onion
  • 1 cup Mandarin oranges slices drained
  • 2 T White Wine Vinager
  • 2 T sugar
  • 2 tsp Soy sauce
  • 2 tsp Sesame oil
  • 4 T vegetable oil
  • 2 T toasted sesame seeds
  • 1 tsp kosher salt
  • 1/2 cup Honey roasted peanuts coarsely chopped
  • 2 packages Ramen noodles (discard sauce package)

Cooking Instructions

Mix dressing ingrediants: oils, soy sauce, vinegar, sugar, salt, sesame seeds, and stir until well mixed. Set aside. Season thighs with salt pepper and ginger powder. Saute in non stick pan on both sides to sear. Cover reduce heat and simmer for 20 minutes. Remove from pan and cool. Chop cabbage into "slaw" and place in a large mixing bowl. Chop green onions and add. Chop chicken into bite sized pieces and add along with orange sections and dressing. Toss with crumbled ramen noodles peanuts and cover and refrigerate for several hours before serving.

Recipe Notes

This is a nice salad for a cool and easy dinner. The crunch of the ramen noodles and tang of the dressing are palate pleasers.

A nice, cool dinner treat!

On a hot evening, this salad is filling, tasty, and hits the spot. Serve with rolls, sweet butter, and watermelon pieces drizzled with lime and honey for a toothsome delight!
