Cut slits in top of roast. Insert pieces of garlic in slits - 3 or 4 per slit. Pour 1 cup vinegar over roast and refrigerate for 2 days turning once or twice per day. On third day pat dry remove garlic and brown in oil on both sides. Pour coffee over roast and cook for 2-3 hours at 300 degrees.
