Combine ingrediants in mixing bowl and beat for 2 minutes. Grease and flour a bundt pan and bake at 350 degrees for 45 minutes. When cool, sprinkle with powdered sugar if desired. NOTE: this cake is so rich and moist that it doesn't need to be frosted.
I first tasted this delectable cake 18 years ago while in training in Oregan. The provider was a good friend and Buddhist Psychologist that had an allergy to eggs. I found this cake to be a little slice of heaven!
