  • CHOCOLATE LAYER
  • 11/4 cups (71/2 ounces) semisweet
  • chocolate chips
  • 1 cup (8 ounces) heavy (whipping) cream
  • 6-oun ready-to-fill chocolate-
  • flavored crumb crust
  • PEANUT LAYER
  • 1 package (8 ounces) light cream cheese (Neufchâtel), at room temperature
  • 1/2 cup heavy (whipping) cream
  • 1/4 cup creamy peanut butter
  • 1/4 cup brown sugar
  • 2/3 cup crushed peanut brittle
  • Garnish: coarsely broken

Cooking Instructions

Chocolate Layer: Heat chocolate chips and 1/4 cup of the heavy cream in a medium-size bowl in microwave on high 45 seconds to 1 minute, until cream is steaming hot. Let stand 1 minute, then stir until smooth. Cool slightly. Or stir chocolate and 1/4 cup cream in a small saucepan over very low heat until chocolate melts and mixture is smooth. Scrape into a medium-size bowl and cool slightly.

Beat remaining 3/4 cup cream in a large bowl with electric mixer until soft peaks form when beaters are lifted. Quickly stir (fold) cream gently into melted chocolate until well blended. Scrape into crust and spread evenly. Refrigerate until set, about 30 minutes.

Peanut Layer: In same bowl (no need to wash bowl or beaters), beat cream cheese, heavy cream, peanut butter and brown sugar until smooth. Stir in crushed brittle. Spread over set chocolate mixture and chill at least 1 hour, until set, or covered up to 2 days.

Before serving, scatter with brittle.
