Pre-heat oven to 350
In a small bowl mix xylitol and water microwave for 30 seconds then stir until mostly dissolved.
In medium bowl beat eggs with an electric hand mixer for around 2 minutes until smooth white "snow". Add ricotta beat for 1 minute. Add xylitol "syrup" vanilla and cocoa beat until thouroughly mixed. (If using fold in mini chocolate chips. --not completely sugar free then)
Generously spray baking dish with no-stick.
Bake for 40 minutes or until toothpick inserted comes out clean.
Serve warm or cold.
This "cheese cake" makes it's own crust. Rich and delicious, with out all the extra sugar and fat. --Try other flavors like lemon and zest (w/less vanilla), instead of cocoa & chips!!! Or Coconut & pinapple...
