Caramel Layer: Heat caramels and evaporated milk in a heavy saucepan over low heat, or in a bowl in microwave, stirring often until caramels melt and mixture is smooth. Pour over pecans.
Truffle Layer: Heat chocolate chips, cream and butter in a heavy saucepan over low heat, or in a bowl in microwave, stirring until chocolate melts and mixture is smooth. Pour over caramel layer. Refrigerate about 4 hours until set.
To serve: Pipe or spoon on whipped cream.
