Collard Green Soup

Ingredients

  • 6 Chicken Thighs
  • 1 lg onion, chopped
  • 1 lb smoked sausage, chopped
  • 1 sm. bag collards, washed and chopped
  • 2, 15 oz cans diced tomatoes
  • 32 oz chicken stock
  • 2 tsp chopped garlic
  • 2 bay leaves

Cooking Instructions

In lg stock pot, add chicken broth, chicken, chopped onion, garlic and bay leaves. Bring to a boil, simmer until chicken is tender. Remove bones and skin. Add sausage, tomatoes and collards. Add water if necessary to cover ingredients. Salt and pepper to taste. Let simmer on med-low for 30 minutes until flavors blend.
