Ingredients

  • 2 tsp canola oil
  • 1 bell pepper, cored and diced
  • 1 bunch scallions, sliced
  • 5 medium red-skinned potatoes (1 lb), cut in 1/2-in. pieces
  • 2 cans (14 1/2 oz each) vegetable broth
  • 1/3 cup unflavored soy protein powder
  • 3 cups soy milk
  • 2 cans (15 1/4 oz each) whole-kernel corn, drained
  • 3/4 tsp dried thyme

Cooking Instructions

Heat oil in a large saucepan over medium-high heat. Add bell pepper and white part of scallions. Sauté until lightly browned.

Add potatoes and broth, bring to a simmer and cook 10 minutes or just until potatoes are tender.

Whisk soy powder and soy milk until blended. Add to saucepan with the corn, scallion greens and thyme. Simmer 5 minutes to blend flavors.
