Place red potatoes, yellow potatoes, jalapeno pepper, carrots and garlic cloves in a large pot. Cover with water, and bring to a boil over high heat. Cook 15 to 20 minutes, or until potatoes are tender. Drain water from pot.
Stir in corn and butter. Mash the mixture with a potato masher until butter is melted and potatoes have reached desired consistency. Mix in cheese, salt, and pepper. Serve hot.

I make 'twice baked taters' that's when you have leftover mashed potatoes. You put them in a mixing bowl, add real bacon bits (not the immatition ones), and cheese. Stirs it all up & place in a baking caserole dish. banke on 350 for 30 minutes, top with cheese and bake for another 20 minutes. |

They are then lightly browned on both sides. My mom used to add corn to the leftover spuds...purdy good :) |

They are great with chicken, of course, but we had some left over and I made potatoe panckakes out of them as a sbnack for my boys! It's a delight to have a different mashed potatoe! |
