Crème Fraîche Frosting

Ingredients

  • 1 envelope (2-1/2 teaspoons) unflavored gelatin
  • 4 cups Crème Fraîche (left) or commercial crème fraîche
  • 3/4 cup powdered sugar

Cooking Instructions

In a small heatproof bowl, pour in 3 tablespoons cold water and sprinkle with the gelatin. Set aside to soften for about 5 minutes.

In a skillet, pour in water to a depth of 1 inch, place over medium heat, bring just to a simmer, and adjust the heat to maintain barely simmering water. Place the bowl of gelatin mixture in the simmering water and stir the mixture constantly until the gelatin is dissolved. Remove from the water and set aside.

In a bowl, combine the crème fraîche and sugar and whisk just until stiff peaks form when the whisk is lifted; avoid overbeating and thus causing the cream to separate. Add the gelatin and whisk to blend. Cover and refrigerate just until stiff enough to spread, about 15 minutes. Use immediately.
