1. Mix crab, egg, breadcrumbs, mayonnaise, chives, mustard, lemon juice, celery seed, onion powder, pepper and hot sauce in a large bowl. Form into 6 patties.
2. Heat oil and butter in a large nonstick skillet over medium heat until the butter stops foaming. Cook the patties until golden brown, about 4 minutes per side.

Mine is BetterDelete the onion powder and add a cup of sauteed onions and green bell pepper, PLUS!! 1/2 pound of shrimp (1/4"-3/8" pieces). You should get 8 good-sized burgers |

4th of July PartyI'm from Arizona where crab is not plentiful. I substituted ground beef for the crab and served them on hamburger buns. I received so many compliments. A real crowd pleaser! |

Why Ruin This With FAT??I agree with others that Hellman's rocks. They have a light version that rocks too. Remember, you can always 1/2 mayo and 1/2 plain yogurt and cut your fat and get a great flavor too. In lieu of all of the fats (i.e., butter & olive oil), a well seasoned cast iron grill over two burners and olive oil and/or butter flavored pam for grilling. Also, panko and crab are very light flavors, however Dijon and celery seed are NOT. a light hand in using these because why ruin the lovely sweet flavor of fresh crab. Now if you are using "KRAB" (a pollock) product, season away. |
