Cranberry Pork Roast

Ingredients

  • 1 can (16 oz) cranberry sauce
  • 1 medium onion, chopped
  • 1 can (5.5 oz) apricot nectar
  • 1/2 cup each sugar and coarsely chopped dried apricots
  • 2 tsp cider or distilled white vinegar
  • 1 tsp each dry mustard and salt
  • 1/4 tsp crushed red pepper
  • 1 2 1/2 lb boneless pork loin roast, well trimmed

Cooking Instructions

Mix all ingredients except pork in a 3-qt or larger slow-cooker. Add pork; spoon some of the cranberry mixture over the top.

Cover and cook on low 6 to 8 hours or until pork is tender.

Remove pork to cutting board and slice. Spoon fat off sauce; serve sauce with pork.

delicious! easy to adapt

This recipe was so easy! I gave it to my husband and asked him to make it for dinner. Came out perfect! We did not have dried apricots, so that was out and when readtyto eat I took some of the "gravy" and reduced it.There has been a lot of sales on pork roasts lately so this is a lot of meals for little money. Amazing!. I cam elooking for this recipe to make it again todey.

Couldn't Stop Eating This

This no fuss meal was realllly good the first day, and even better the next! My family can't wait for me to make it again! I added just a smidge of ground red and black peppers for a little more zing and served it with brown rice. Next time I will add a little crushed pineapple and serve it with risotto. Note: Get a roast as close to or more than 2-1/2 lbs as it will cook down, and you will want to eat alot of this!
