Creamy Chicken Enchiladas

Ingredients

  • 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular, 98% Fat Free or 25% Less Sodium)
  • 1 container (8 ounces) sour cream
  • 1 cup Pace® Picante Sauce
  • 2 tsp. chili powder
  • 2 cups chopped cooked chicken
  • 1 cup shredded Monterey Jack cheese (about 4 ounces)
  • 10 flour tortillas (6-inch) , warmed
  • 1 medium tomato , chopped (about 1 cup)
  • 1 green onion , sliced (about 2 tablespoons)

Cooking Instructions

Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.

Stir 1 cup picante sauce mixture, chicken and cheese in a large bowl.

Spread about 1/4 cup chicken mixture down the center of each tortilla. Roll up and place seam-side down in a 3-quart shallow baking dish. Pour the remaining picante sauce mixture over the filled tortillas. Cover the baking dish.

Bake at 350°F. for 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and onion.

Absolutely DELICIOUS!!!

OMG I cooked these for some friends who were coming over for dinner, and let me tell you, they were SLAMMIN'!!!! So tasty, and not hard to make at all. I'm going to try the taco mix instead of the chili pepper next time, but it was sooo good!!! Thanks for posting this recipe!

Family Favorite

I used this recipe some time back, and it was instantly a favoritie for my family. I am making it today by request of my daughter, who had a baby this past week. I am also making a second batch for them to have later. I substitute 1 envelope dry taco seasoning mix for the chili powder (as suggested in earlier reviews). This is great served with a dinner salad and/or spanish rice.

a little time consuming.. but we loved them. instead of chili powder we used taco mix, like the powder you mix in with your ground beef for tacos. i used some when we cooked the chicken and then more in place of the chili powder. It was really yummy!!

MMMMM Mexican!

i love mexican..this one was great, but traditional.. I got a great recipe for this Taco Pasta which is awesome.. pasta, ground meet, cheese.. tomatoes.. oh my mouth is watering just thinking of it.. got it from this cookbook called "Get in the Kitchen, BIT@HES!" (bitchcooks.com)
