First wash shrimp and scallops and drain. If scallops are big cut them to bite size. Then sprinkle Bay seasoning or seafood seasoning over them and mix set aside. Choose a good size pot and saute onion and garlic in olive oil. Add seafood and saute on low mixing in all the flavors also add the pepper. While that is cooking boil water with salt and some oil for pasta. Then get a large bowl and wisk the eggs real well. Add cheese and wisk some more until mixed in.then add the half and half and mix some more. Mixture will be somewhat smooth. (set aside) Boil spaghetti until tender and drain. Turn heat up on the other pot and stir seafood and veggies until oil/liquids gets hot again add drained spaghetti and then the egg mixuture. Continue tossing and stirring until pasta is well coated and mixture is creamy but cooked. Turn heat down low. Continue to toss until serving. Garnish with parsley if you like. This recipe can be modified with bacon or pancetta and different kinds of cheeses. Easy and delicious. If it gets too thick just add more half and half to thin out. Fresh ground pepper is great on this too.Remember also when you saute the seafood in the oil you will get some nice juice from the shrimp and scallops make sure you keep that in pan with oil. Gives the pasta great flavor. You can fresh or canned Parmesan and Romano.
I have made this over and over. Just a simple carbonara basically. Be creative and add your own favorites. I like a little cayenne, but not my husband.
