In a large pot, bring to boil water, cayenne, lemon, bay leaves, garlic heads, onion, thyme, Tabasco and kosher salt. Simmer for 5 minutes then remove lemon, garlic, bay leaves and onion with tongs or a skimmer and discard. Add shrimp and return to a boil for 1 minute or until shrimp float. Remove from heat, drain and let cool. Then peel off shells and slice shrimp in half lengthwise. Set aside.
Simmer pineapple juice in a small pan until reduced to a syrupy consistency. Set aside to cool.
Combine pineapple syrup, mayonnaise, and ketchup in a large bowl. Add pineapple, peppers and red onion. Season with kosher salt and creole seasoning to taste. Add pasta and shrimp, toss and serve.
Round Out the Meal:
With fresh mixed greens served on the side or as a bed for the pasta and shrimp.
Kid Friendly:
Limit or omit spicy seasonings.
