Crockpot Chicken and Dumplings

Ingredients

  • 2 c. sliced carrots
  • 1/2 c. celery, chopped
  • 1 onion, chopped
  • 1 bell pepper, sliced
  • 2 (14 1/2 oz) cans chicken broth, reserve 1 cup)
  • 1 lb. boneless chicken breasts, cut into 1" pcs.
  • 1 lge. potato, cut in half
  • 6 oz. mushrooms, slliced
  • 2/3 c. flour
  • 1 c, chicken broth
  • 3/4 c. frozen peas
  • 3/4 t. dried basil
  • 3/4 t. dried rosemary
  • 1/4 c. cream
  • DUMPLINGS:
  • 1 c. biscuit mix
  • 1/4 c. cream

Cooking Instructions

Place carrots, celery, onion, and bell pepper slow cooker.

Add chicken broth (less 1 cup).

Cover, cook low for 2 hrs.

Add chicken pieces, potato, mushrooms.

Mix flour and 1 c. chicken broth and add to cooker with peas, basil and rosemary.

Cover, cook 4 hrs.

Stir in 1/4 c. cream

Make dumplings and spoon into pot.

Cook 30 min. uncovered.

Cover and cook 30-45 min. longer

Recipe Notes

My mother made the best chicken and dumplings - from killing the chicken to the finished product. Everything was fresh. (The flour came out of an old fashioned flour-bin.) There'll never be any as good as that!
