Crockpot Menudo (without tripe)

Ingredients

  • 2 T. Canola oil
  • 2 med. onions, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 lb boneless chicken thighs
  • 1 T. chili powder
  • 1 t. ground cumin
  • 8 c. canned chicken broth
  • 1 (4 oz) can green chilis, chopped
  • 1 (15 oz) can tomatoes, chopped
  • 1 t. oregano
  • 2 (15 1/2 oz) cans hominy
  • 1/4 c. chopped fresh cilantro leaves
  • juice of 1 lime
  • kosher salt
  • fresh ground black pepper

Cooking Instructions

Heat oil in pan, saute onion, celery, and garlic, remove and set asice.

Brown chicken, add all to crock pot.

Add to crock pot: chili powder, cumin, chicken broth, green chilis, tomatoes, and oregano.

Cook on low 3 1/2 hrs.

Add hominy. Continue cooking 30 min. longer.

Before serving add cilantro, lime juice, salt, and pepper to taste.

Recipe Notes

While I like the tripe version, chicken is a nice alternative.
