Crunch Baked Pork Cutlets

Ingredients

  • 6 3/4 lb cleaned deboned pork cutlets
  • 1/2 cup yellow corn meal
  • 1 cup crumbled frosted shredded wheat mini squares
  • 1/4 teaspoon salt
  • 1/8 teaspoon Adobo all purpose seasoning
  • pan release spray
  • 1 each large egg
  • 1 cup water
  • 1/2 teaspoon lemon juice

Cooking Instructions

preheat oven to 375 Prepare cutlets clean remove excess fat score with a fork set on wax paper.

prepare breading mix: dry seasonings crumbled wheat squares and corn meal. Spread on a dry bakers sheet or wax paper.

prepare egg dip: egg water and lemon juice.

dip chops in egg mix and than cover with crumb mix. Spread single layer on sheet pan prepared with release spray. Bake for approx 45 minutes or to internal temp of 160. Garnish with parsley and serve with warm chunky applesauce and sweet cole slaw.

Recipe Notes

I used the shreaded wheat when I did not make bread crumbs and I often times add a little sugar to my recipes for glazing or browning so the frosted crumbs at the bottem of the cereal bag work very nicely.
