Crunchy Romaine Toss

Ingredients

  • 1 cup chopped walnuts
  • 1 pkg. ramen noodles, broken into small pieces
  • 4 Tbls. unsalted butter
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup wine vinegar
  • 1 1/2 tsps. soy sauce
  • salt and pepper to taste
  • 1 bunch coarsely chopped broccoli
  • 1 head romaine lettuce (or 2 bags)
  • 4 green onions, chopped

Cooking Instructions

Topping: Brown walnuts and noodles in butter. Cool on paper towels. Dressing: Combine all dressing ingredients. (oil, sugar, vinegar, soy sauce, salt and pepper). Set aside. Salad: In a large bowl, combine broccoli, lettuce and green onions. Toss with dressing to taste. Top with walnut mixture. Special Note: Salad will not keep well when dressed. Store in 3 parts and combine when needed. Recipe can be halved.
