Ingredients

  • olive oil cooking spray
  • /3 frozen chopped onion
  • 4 fresh mushrooms (med), sliced
  • fresh plum tomatoes, chopped
  • cup fresh chopped spinach (spinach leaves)
  • raw large egg
  • egg white
  • /2 cup low fat milk
  • /2 tsp dijon mustard
  • tsp chopped parsley
  • tsp fresh tarragon
  • /4 tsp salt
  • /4 tsp paprika
  • pinch black pepper, to taste (freshly ground pepper)
  • 2 tbsp part skim shredded mozzarella

Cooking Instructions

Preheat the oven to 375 degrees Fahrenheit. Spray a 2 cup casserole dish with the cooking spray.

Spray a skillet with cooking spray. Sauté the onions and mushrooms for approximately 5 minutes.

Add in the spinach and tomato. Cook for 2 minutes, stirring frequently.

Place the spinach mixture in the casserole dish.

Whisk the egg, egg white, milk, mustard, parsley, tarragon, salt, paprika, and pepper in a bowl. Mix in with the egg mixture and sprinkle the cheese on top.

Bake for approximately 20 minutes, uncovered. Let cool for 5 minutes before cutting.
