Preheat the oven to 375 degrees Fahrenheit. Spray a 2 cup casserole dish with the cooking spray.
Spray a skillet with cooking spray. Sauté the onions and mushrooms for approximately 5 minutes.
Add in the spinach and tomato. Cook for 2 minutes, stirring frequently.
Place the spinach mixture in the casserole dish.
Whisk the egg, egg white, milk, mustard, parsley, tarragon, salt, paprika, and pepper in a bowl. Mix in with the egg mixture and sprinkle the cheese on top.
Bake for approximately 20 minutes, uncovered. Let cool for 5 minutes before cutting.
