Cuban Sandwiches with Rice-Orange Sala..

Ingredients

  • 1 loaf (20 oz) soft-crusted ­Italian bread, cut in half lengthwise
  • 2 Tbsp Dijon mustard
  • 1 reserved cooked pork tenderloin, cut in /4-in.-thick slices
  • 8 thin slices (2 oz) ham
  • 1 large kosher dill pickle, cut lengthwise in 8 slices
  • 4 slices (3 oz) Swiss cheese
  • Rice salad
  • 3 oranges
  • 3 cups reserved cooked rice
  • 1/2 cup thinly sliced scallions
  • 1/4 cup sliced, pitted green olives
  • 3 Tbsp bottled olive oil & vinegar dressing
  • 1 tsp ground cumin
  • 4 cups mixed baby salad greens

Cooking Instructions

Spread bottom half of bread with mustard. Top with pork, ham, pickle and cheese. Add bread top; cut in 4 pieces.

Coat a grill pan with nonstick spray; place over medium heat. (See Note.) Place sandwiches on grill; cook 10 minutes or until browned, turning once halfway through grilling. Press down firmly and often with a large spatula.

Rice Salad: Meanwhile cut peel from oranges to the flesh. Cut between membranes to release sections into a medium bowl. Squeeze juice from membranes into a small bowl. Add rice, scallions and olives to medium bowl. Whisk dressing with 2-Tbsp reserved orange juice and the cumin. Stir into rice mixture; spoon on salad greens. Serve with sandwiches.

Note: If using a contact grill, cook 8 to 10 minutes.
