Cucumber Lemonade

Ingredients

  • 2 each English (hothouse) cucumbers
  • 1/2 cup fresh lemon juice
  • 2 1/2 cups spring or filtered water
  • 1 Simple Syrup or agave syrup

Cooking Instructions

Finely grate cucumbers into a fine-mesh sieve set over a bowl. Drain the cucumber for 1 hour and collect the juices. Press on the cucumber pulp to extract any additional juice. Add lemon juice, water and syrup, if using, to the cucumber juice. Serve chilled or over ice.

Confused about the simple syrup..How much do you add? It says 1 .

I'm confused about the amount of simple syrup to add, it just says 1. Help I'm sure it will be delicious.

Cucumber Lemonade

This drink sounds refreshing. We live in Texas and it gets so hot & humid here, I can't wait for summer so I can make it for my parents I'm sure we'll all enjoy it.

    I got the idea for this unusual and refreshing cucumber lemonade on a trip to the Napa Valley. The original was an antioxidant drink made with water, cucumber and lemon slices, and it was so delicious that I have been making it at home ever since. Rather than sliced ingredients, however, I use juice. While this is an unsweetened lemonade, you can add simple syrup to taste.
