Curried Chicken with Apricots and Pep..

Ingredients

  • 12 oz boneless skinless chicken breasts, cut into 1/2 inch strips
  • 1 Tbsp margarine or butter
  • 1 cup thinly sliced red yellow or orange peppers
  • 1/3 cup finely chopped onion
  • 3/4 tsp curry powder
  • 12 oz fat-free Evaporated Milk
  • 1T +2 t cornstarch
  • 8-1/4 oz can peeled apricot halves in juice drained but reserve juice
  • 2 cup hot cooked rice
  • Toasted almonds for garnish

Cooking Instructions

Spray large skillet with cooking spray and heat over medium high heat.

Add chicken cook 6-8 minutes. Remove from skillet and keep warm.

Add butter or margarine to skillet and melt. Add peppers onion and curry powder. Cook for 3-5 minutes and stir occasionally.

Stir in milk.

Combine cornstarch and small amount of juice in small bowl and add to skillet with rest of reserved juice.

Bring to a boil stirring constantly. Cook until thickened.

Add chicken and apricots stir gently. Heat through. Serve over rice and garnish with almonds.
