Heat stir-fry oil in a large nonstick skillet over medium-high heat. Add pork in 2 batches and stir-fry each batch 30 to 45 seconds until no longer pink. Remove to a bowl with a slotted spoon.
Add cucumber to skillet and stir-fry 45 seconds to 1 minute until crisp-tender. Add to bowl with pork; stir to mix. Cover loosely to keep warm.
Put 11⁄3 cups water and contents of spice packet (omit any olive oil or butter called for on packet) into same skillet. Bring to a boil, reduce heat to low, cover and simmer 2 minutes. Stir in couscous, cover, remove from heat and let stand 5 minutes. Fluff couscous lightly with fork.
Spoon pork and cucumbers in center of serving platter. Surround with couscous and sprinkle with cilantro.
If your skillet has no lid, use a baking sheet or pizza pan as a cover.
