Ingredients

  • 4 ears fresh corn
  • 2 tablespoons butter
  • 1 small sweet onion, diced
  • salt and pepper to taste

Cooking Instructions

Cut corn kernels from cob. Melt butter in a medium skillet over medium heat. Saute corn kernels just until tender, then mix in onion. Continue to saute until onion is just beginning to turn crispy. Season with salt and pepper. Enjoy warm or cold.

Wonderful way to fresh corn.

I know a lot of people that cannot eat corn on the cob. This is a great way to fix it so they still have the taste of fresh corn on the cob without eating it off the cob. The onion really adds extra flavor too. Thank you so much for this recipe.

Daddy's fried corn and onions

I remember my mother making fried corn as a child. It was great eating. I was thinking of this dish a few days ago and glad I came across this one. This would make a great side dish with sandwiches, burgers, or any light meal. Instead of using butter I would the butter spray which works just as well as using butter. When I make grilled cheese that is what I butter spray. I learned this when I work in food service for the school district where I worked. Another good idea may be to a tablespoon of olive oil with a tablespoon of butter or even less. I usually don't the full amount of butter or margarine a recipe calls for and when frying it comes out just as good.
