Thoroughly wash thawed birds and pat dry. Using your hands, rub mayonaise over birds and into cavity. Salt and pepper, set asise. Wash hands thoroughly any time your are handling poultry products.
core and cut apple into smaller pieces. remove husks from garlic. Combine in a food processor with 2 teaspoons of olive oil and grind until mushy.
rub the apple-garlic mixture over the birds, and put remaining mixture into the bird's cavity. Season to taste.
Place birds in shallow baking dish in 350 degree oven for 1 hour and ten minutes, loosely covered with a foil tent. Remove foil tent and continue to bake for 10-15 minutes until birds are golden brown.
Remove birds from oven and allow to cool for 10-15 minutes. Slice birds in half (down the back bone and through the breast bone. Serve over rice.
this dish works well with small chickens, as well.
