Hard boil eggs approx. 35 minutes. cool ,peel, halve eggs. Set egg yolks to the side.
In small mixing bowl, crush egg yolks to powder form. Mix in mayo,mustard & relish (should be a paste like consistency.) stir in salt & pepper.
scoop mixture into halved egg hollows.(can be done using a clear sandwich bag & cutting one of the corners to make a pastry bag effect).Fill all 24 egg halves. Sprinkle paprika over finished eggs. Loosly cover with wax paper and refridgerate.

In large pot, cover eggs with water. Set on high heat. When the water begins to fully boil, set timer for 10 minutes (a full ten minutes) remove from heat and rinse in cold running water for 2 minutes. Let cool before peeling.
35 minutes seems a long time. When making deviled eggs it would make sense to boil a little longer to make the whites extra firm for holding the yolk mixture. I'd try 15 minutes or so. |
