Dilly Green Beans & Nutty Green Be..

Ingredients

  • 1-1/4 lbs green beans, rinsed and trimmed or 3 - 4 cups frozen
  • 1/2 tbsp walnut or hazelnut oil
  • 1 green onion, chopped fine
  • 1/2 tsp grated lemon zest
  • 1 tbsp fresh lemon juice
  • 1 - 2 tbsp chopped fresh dill
  • Salt to taste
  • pepper to taste
  • 1 - 2 tbsp chopped toasted walnuts (optional)
  • 1/2 tbsp butter, cut into small pieces
  • 1/2 tsp grated lemon zest
  • Salt to taste

Cooking Instructions

Leave the beans whole or cut into 2-inch pieces. Bring a large pot of water to a boil. Add the beans; bring back to a boil and cook uncovered for 2 - 3 minutes until crisp tender. Drain and cover to keep warm until ready to serve. If using frozen green beans, follow the package instructions for heating.

Blend together the walnut oil, green onion, lemon zest, lemon juice, and fresh dill in a serving bowl. Add half of the green beans, tossing to combine. Season with salt and pepper. Garnish with chopped walnuts, if desired.

Add the butter and lemon zest to the remaining green beans. Toss until the butter is melted. Season with salt and garnish with chopped walnuts, if desired.
