Double Chocolate Pecan Cookies

Ingredients

  • 2 sticks (1 cup) unsalted butter, softened
  • 2/3 cup packed light-brown sugar
  • 2/3 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 21/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 bag (10 oz) English toffee bits
  • 11/2 cups coarsely chopped pecans
  • 2 coarsely chopped 10-oz bars milk chocolate

Cooking Instructions

Heat oven to 375°F. Have baking sheet(s) ready.

Beat butter, sugars and vanilla in a large bowl with mixer on medium speed 1 to 2 minutes until fluffy. Beat in eggs, baking soda and salt until combined. Add flour and beat on low speed until blended.

Stir in 2⁄3 cup unsweetened cocoa powder, 1 bag (10 oz) English toffee bits, 11⁄2 cups coarsely chopped pecans and  2 coarsely chopped 10-oz bars milk chocolate.

Drop rounded tablespoons dough about 11⁄2 in. apart on ungreased baking sheet(s).

Bake 8 to 9 minutes until edges are golden brown. Cool on sheet 1 to 2 minutes before removing to a wire rack to cool completely.
