1. Place a coffee filter in its cone and set it over a large measuring cup or bowl. (This is the easiest draining device, but you can put the yogurt in a cheesecloth-lined strainer or a fine-meshed plastic strainer.) Make sure the sides of the measuring cup or bowl are high enough so that the cheese does not sit in the liquid as it accumulates.
2. Place the yogurt in the filter and refrigerate 2 to 4 hours. As noted above, the longer the yogurt drains, the thicker it will get, though much of the liquid will have drained off during the first hour if you want a thinner consistency. When it has reached whatever consistency you desire, discard the liquid. It requires absolutely no other attention. Place the Drained Yogurt in a covered container and keep refrigerated between uses. Drained Yogurt will last as long as the date on the yogurt carton.
