Easy Banana Nut Cake with Cream Cheese..

Ingredients

  • 1 box Yellow cake mix, plus eggs, oil and water to blend
  • 3 very ripe bananas, mashed
  • 1 cup chopped candied walnuts
  • 1 3 oz package cream cheese, softened
  • 3 tablespoons butter, softened
  • 1 tsp pure vanilla extract
  • 3 Tablespoons milk (more or less to reach desired consistency)
  • 2 cups powdered sugar

Cooking Instructions

Preheat oven to 350 degrees. Prepare 10 inch bundt cake pan by greasing and flouring. Mix cake according to package directions and add mashed bananas. Fold in 3/4 cup chopped nuts. Pour into prepared pan and bake according to package directions. Remove from oven and cool 15 minutes. Turn out on serving platter and let cool completely. Blend cream cheese with butter and vanilla. Add powdered sugar and add milk, one tablespoon at a time until mixture is smooth and will run down sides of cake in thick streams when spooned on top. Spoon glaze on top and sprinkle with remaining chopped walnuts.

Recipe Notes

This cake is a great way to overripened bananas. For a change of pace, add some mini chocolate chips or candied pecans and coconut.

I have made this cake for years and it never fails to bring raves from guests! It's easy, elegant, tastes incredibly rich and has the wonderful fragrance and flavor of banana nut bread
