Sautee chicken in olive oil and italian spices sprinkled on both sides.
Add garlic to the chicken
When chicken is finished cooking, dice into bite size chunks.
Meanwhile, cook past - usually some type of macaroni.
When pasta is done, and drained, combine pasta with chicken and tomatoes. Mix together. in an 11x13 casserole dish.
Sprinkle parmesan in with the mixture. Then sprinkle the remaining on top and place in the oven for approx 15-minutes.
When finished, topping should be browned and somewhat melted.
Optional: Add mozzerella cheese to the pasta mixture and sprinkle on top before baking.
Serve with italian bread, salad, or a vegetable.
This recipe is great for freezing! I always make a big 11x13 pan and then freeze half for another meal.

08/03/08 02:57 AM | I'm figuring that you'll need one box of pasta for this recipe!Sounds like a nice remake of the traditional chicken parmesan. Have you considered adding 1/2 cup chopped onion and reducing the spices to 1 -3 Tablespoons? A hit of red pepper flakes would make the sauce have a bite, and a tablespoon of brown sugar would bring out the natural sweetness of the tomatos. Also, I might also add some shredded Italian blend cheese or mozarella. |
