mix all the ingredients in a mixing bowl until well blended and mixture is easy to form. If the mixture is too dry add a tablespoon of water until satisfied. If the mixture is too moist, add breadcrumbs until satisfied. Form the mixture into even patties. I find some folks like a big thick patty while others like a small 1/2 inch thick patty. Place the patties on a mixture and refrigerate for at least 4 hours (overnight is best). Fry the patties in a frying pan in oil until each side is golden brown. Drain on a paper towel and serve hot. I serve with orange marmalade since these cakes have a kick!
These have become my signature and I learned the recipe from a chef at a restaurant i waited tables at in college. These are easy to prep but do require a considerable time in the fridge. This is not a last minute emergency dish.
