Easy Squash Casserole

Ingredients

  • 6-8 med yellow squash
  • 8 oz sharp cheddar cheese shredded
  • 2 eggs
  • 1/2 cup seasoned bread crumbs
  • taste t salt & pepper to taste
  • 1 med onion
  • 2-3 pieces slices of bacon optional

Cooking Instructions

Clean and cut squash, do the same to the onion.

Place in a medium to large pot with water to cover and boiling.

While boiling cook bacon until crisp.

Preheat oven to 375

Remove bacon let cool and crumble this is totally an optional.

Boil the vegs until they are soft. Drain water off squash and onion chop nicely

Combine bread crumbs, 1/2 of cheese, eggs, salt and pepper and bacon mix together well.

Prepare a oven proof casserole dish with cooking spray

Place squash mixture in dish and cover with remaining cheese. Bake for about 30-40 minutes you will see the cheese on top bubbly

Recipe Notes

You can always eliminate the bacon it gives it a little more taste but for more figure friendly you can a small can of water chestnuts chopped. It gives it as great texture

Easy Squash Casserole

This recipe was good but I had to figure out how to finish the recipe myself, there is no complete instructions of how to assemble. Also adding fresh herbs adds a nice touch!

Great Squash Dish

This recipe was great! I grow alot of squash every summer and love good recipes. My family and friends thought this dish was wonderful and wants me to bring it to many potluck dinners.
