Clean and cut squash, do the same to the onion.
Place in a medium to large pot with water to cover and boiling.
While boiling cook bacon until crisp.
Preheat oven to 375
Remove bacon let cool and crumble this is totally an optional.
Boil the vegs until they are soft. Drain water off squash and onion chop nicely
Combine bread crumbs, 1/2 of cheese, eggs, salt and pepper and bacon mix together well.
Prepare a oven proof casserole dish with cooking spray
Place squash mixture in dish and cover with remaining cheese. Bake for about 30-40 minutes you will see the cheese on top bubbly
You can always eliminate the bacon it gives it a little more taste but for more figure friendly you can a small can of water chestnuts chopped. It gives it as great texture
