Toast bread slices.
Meanwhile, whisk your eggs, adding a pinch of salt (or to taste) and a generous grind of pepper.
Heat butter in a non-stick or cast iron pan over medium heat. Do not let butter burn. Add eggs, scrambling soft, until just set. To scramble soft, make sure your heat is not too high and the eggs are kept moving in the pan, either with a whisk or spatula. Remove from heat immediately when done.
Spread a schmear -- basically a light covering -- of cream cheese on each slice of toast. Top one slice with scrambled eggs, adding a few shakes of hot sauce (if using), a slice of tomato (salted), and cover sandwich with the other slice of toast.

A Long Time Favorite!i've been making variations of this delicious sandwich for literally decades. Sometimes I substitute a toasted English muffin for the whole grain bread. And for a whimsical change, I sometimes throw in radish or alfalfa sprouts...Yum!
You can also really dress it up by add sliced chicken or smoked salmon. This could really become tops on your list of cravings - pregnant or not! |

YummmmyyI recently discovered that the egg/creamcheese/bagel combination is delightful myself. I must try this with whole grain bread and tomato too!! Vege cream cheese is the best!!! |
