Ingredients

  • 1 lb Ground Beef
  • 1 Medium Onion chopped
  • 2 cloves Garlic pressed
  • 1/3 cup Bottled Picante Sauce
  • 1 16 oz can Refried Beans
  • 1 10 oz. can Red Enchilada Sauce
  • 1 tsp kosher salt
  • 6 cups tortilla chips crushed
  • 3 cups Grated Cheddar Cheese
  • 1 cup Sliced black olives

Cooking Instructions

Preheat oven to 375 degrees. Grease a 9x13 inch glass pan. In a large frying pan brown the onion garlic and beef until onion is soft and beef is cooked. Lower heat and add the picante sauce beans enchilada sauce, olives and salt. and cook until well combined and bubbling. Remove from heat. Place 1 cup of the chips in the bottom of prepared pan Top with half of the beef mixture. top with another cup of the chips and 1 1/2 cups of the cheese. Put in the rest of the meat mixture top with rest of the chips and the rest of the cheese. Cover and bake for 30 to 40 minutes or until the center is hot and bubbling. Serve immediately with garnishes os sour cream chopped fresh tomatos sliced iceberg lettuce chopped green onions and avocado slices if desired.

Recipe Notes

This recipe was adapted from one of my favorite authors, Diane Mott Davidson and is formally titled "The Whole Enchilada Pie". I found that the crushed Fritos made it too salty, so I substitute tortilla chips. Enjoy!

Americanized Mexican at its finest!

I love this recipe!!!! It's a crowd pleaser, easy to make and tastes wonderful. You can substitute lower fat cheese and vegetarian refried beans, as well as baked tortilla chips without compromising the flavor. Bon Appetit!
