English Muffin "Pub Pie"

Ingredients

  • 1 large onion
  • 1 tbsp butter
  • 3 tart cooking apples, such as Granny Smith
  • 2 tsp granulated sugar
  • 1 cup half-and-half
  • 1 tbsp light or dark brown sugar, firmly packed
  • 1 tbsp Dijon mustard
  • 8 slices (about 4 ounces) Canadian bacon
  • Cooking oil spray
  • 4 English muffins

Cooking Instructions

1. Turn on the oven to the lowest setting.

2. Split the muffins and toast them. Meanwhile, spray a 12-inch nonstick skillet with cooking oil spray and set it over high heat. Place the bacon in the pan and fry it until it just begins to brown, about 1 minute on each side. While the bacon cooks, peel the onion, slice it thin, and set aside.

3. When the bacon is lightly browned, remove the skillet from the heat and place the bacon slices on paper towels to drain briefly. Arrange the toasted muffin halves on a baking sheet or large ovenproof serving platter and place a bacon slice on each half. Place in the oven to keep warm.

4. Taking care not to burn yourself, wipe out the skillet using several layers of paper towels. Set the skillet over low heat, add the butter, and melt it. Add the onion slices and begin to cook.

5. Meanwhile, cut the apples in half and remove the cores. Place the apples, cut side down, on a cutting board and cut into 1/4-inch-thick slices, leaving the peel on. Add them to the skillet as you cut. Sprinkle with the granulated sugar and raise the heat to medium-high. Cook until the apples and onion slices are tender, about 5 minutes.

6. Meanwhile, combine the half-and-half, brown sugar, and mustard in a 2-cup measure or small bowl and whisk to blend.

7. When the apples and onion slices are tender, remove the baking sheet from the oven, leaving the oven on, and scatter the apples and onions evenly over the bacon-topped muffins. Return the baking sheet to the oven.

8. Pour the half-and-half mixture into the same skillet and bring it almost to a boil over medium heat, whisking constantly. Cook, whisking, for 1 minute more (do not let the sauce boil), then remove the pan from the heat.

9. Transfer two muffin halves to each individual serving plate, making sure each has enough apple and onion mixture, top with sauce, and serve.
