Steam whole unpeeled sweet potatoes till almost cooked. Peel and slice to 1/2" thickness.
Peel, core and dice Pairs to 1/2" cubes.
Using small sauce pan on medium low heat combine butter brown sugar and spices till melted and blended. Stir constantly while heating.
Add syrup and 1/3 of marshmallows to sauce stirring slowly till marshmallows melt completely.
Using a Medium casserole dish layer sweet potatoes Pairs sauce and chopped pecans till dish is within 3/4" of top.
Cook in Medium Oven (350 degrees) for 30 Minutes.
Add remaining marshmallows to top being careful not to overfill dish!
Return to oven and cook for remaining 15 Minutes or till Marshmallows are browned on top.
This was a recipe that I developed with my Dad. It's a real sweet treat, so you only need small portions. Just be sure to make enough, as most people will want more than one portion!
