Extra-Crunchy Peanut Butter Cookies

Ingredients

  • 1 stick (1/2 cup) unsalted butter, softened
  • 3/4 cup firmly packed light-brown sugar
  • 1/2 cup crunchy peanut butter, preferably all-natural with no added sugar or fat
  • 1 extra-large egg, lightly beaten
  • 1/2 tsp vanilla extract
  • 1 1/2 cups self-rising flour
  • 1 1/2 cups roasted unsalted peanuts

Cooking Instructions

Heat oven to 350°F. have baking sheet(s) ready.

Beat butter, sugar, peanut butter, egg and vanilla in a large bowl with mixer on medium-high speed until blend- ed. on low speed, beat in flour just until blended.

Roll dough into 35 walnut-size balls. put peanuts into a shallow dish and dip balls in to coat one side. place, peanut side up, 2 in. apart on ungreased baking sheet(s). press balls to flatten.

Bake 12 minutes or until bottoms of cookies are golden. cool on baking sheet on a wire rack a few minutes before transferring to wire rack to cool completely.
