At least 4 hours or up to 24 hours before serving: Put pork into a gallon-size ziptop food bag. Add Marinade ingredients, seal bag, then turn and press to distribute and mix. Refrigerate.
Heat broiler or stovetop grill pan. Remove pork from bag and discard Marinade. Rub with chili powder and cumin.
Broil 3 to 4 in. from heat source or grill 20 to 25 minutes, turning to brown on all sides, until barely pink in middle and an instant-read meat thermometer inserted in center registers 155°F to 160°F. Remove to cutting board, cover loosely with foil and let rest about 5 minutes.
Meanwhile heat oil in a large nonstick skillet over medium-high heat. Add onions and pepper; sauté 6 minutes or until onions are lightly browned. Stir in vinegar. Warm tortillas as directed on package.
Thinly slice pork crosswise. Arrange on platter with tortillas. Put onions and pepper in 1 bowl and Accompaniments in separate bowls. Let diners assemble their own fajitas.
