"Fancy" Pinto Beans

Ingredients

  • 3 cups raw pinto beans
  • 2 small cans tomato sauce
  • 1 onion, chopped
  • 4 small pototoes, cubed
  • 2 small cans hot green chili or fresh chopped chili to taste
  • 1 small clove garlic, chopped

Cooking Instructions

Wash your beans, put in pressure cooker with all other staples. Fill your pressure cooker with water recommended by your cooker, cook one hour. I then check my beans, they will usually be a little undercooked at this point. Turn heat down very low and finish cooking, this adds to flavor. Serve with hot tortillas.

This receipe is easy. It also tastes very good the next day. can be made ahead to take to a get together. A extra benefit is that a few days after you have made the dish, you can remove the juice and make great burritos with these beans. All you have to d

Smokey/Meaty Version

Add smoked hamhocks, ground cumin seed, worcestershire sauce and chinese oyster sauce (delete the tomato sauce....potatoes optional). This is my "Mom's Okie Beans"...Billy's Version.
