Fiesta Chicken and Rice

Ingredients

  • 4 chicken breasts (chunked/cooked)
  • 4 cups cooked rice
  • 1 can corn
  • 1 pkg taco seasoning
  • chili powder
  • 1 12 oz can enchilada sauce
  • cheddar/colby cheese (chunked)

Cooking Instructions

Cook rice as directed and add taco seasoning to water white or brown. At same time cook chunked chicken season with salt pepper and chili powder (? 1tsp).

In a 4 quart casserole dish add cooked chicken rice can of corn and can of enchilada sauce. Then add chunked cheese (as cheezy as you would like it). If seems a little dry add a little taco sauce or salsa you have on hand.

Place in oven at 350` for 30-45 min. Until cheese is melted.

Serve with corn chips or doritos.

If interested you can add black beans or pinto beans.
