Fish with Sour Cream Stuffing

Ingredients

  • 2 lbs fish fillets (sole, flounder, swordfish, haddock, halibut) (1 kg)
  • 3 tbsp butter (50 ml)
  • 1 small onion, finely chopped
  • 1/4 cup chopped celery (50 ml)
  • 1 tsp salt
  • Dash pepper
  • 1/4 cup sour cream (50 ml)
  • 3 tbsp chopped parsley (50 ml)
  • 1 tsp dried chervil (5 ml)
  • 2 cups soft bread crumbs (500 ml)

Cooking Instructions

Pat the fish fillets dry with paper towel. Melt the butter in a small skillet and cook the onions until tender. Pour into a medium bowl and add the remaining ingredients, mixing well.

Lay the fish fillets out on the counter and spread the stuffing over the fillets, leaving a one-inch (2.5 cm) border all around. Roll up, jelly-roll fashion, and secure every inch (2.5 cm) with wooden toothpicks. If necessary, lace in between the toothpicks with heavy string.

Oil lightly and place in hinged grill basket, on rotisserie, over medium heat.
