Whip the cream or Crème fraîche to soft peaks, adding sugar or vanilla extract, if desired, after the cream begins to thicken. Chill.
To assemble the tart, spoon the whipped cream into the tartlet shells and arrange the fraises des bois on top, stem ends down. Garnish with a small stem of berries. Serve immediately.
