Fried Corn with Bacon

Ingredients

  • 6 ears corn, husked and cleaned
  • 6 slices bacon
  • 1/2 large green bell pepper, chopped

Cooking Instructions

Slice corn off of cob and scrape cob to release the milk. Set aside.

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.

Retain 2 tablespoons of the bacon grease in the pan and fry pepper until just softened. Add the corn and cook until tender. Stir in the crumbled bacon and cook 1 minute more.

My mom's variation

My mom used to make this but she put in some shredded cabbage at the end and stirred it in just until it warmed up but was not wilted. No green peppers, either. Mmm Mmm Good!

Fabulous

I have served this dish (without the green peppers) twice for barbecue gatherings. Everyone absolutely loved it and asked for the recipe. This dish couldn't be easier to prepare.

add a little fresh cilantro!

I've made a variation of this, with some fresh cilantro and a little butter. Yum!

Fried Corn with Bacon

This is a complete favorite. We can't eat green peppers, though, so we leave it out. We like to let the corn get a little brown with some crispies on it, and add a little garlic about 1 minute before pulling the corn off the heat.

Try adding a little garlic and onion while pan frying the green pepper.
