Please read about cornstarch, page 548 [see below]. Place in the top of a double boiler: A 2-inch piece of vanilla bean
1 cinnamon stick
1-1/2 cups milk
Bring to a boil over direct heat and then cool slightly. Mix in a bowl until smooth: 1/4 cup sugar
1 tbsp all-purpose flour
1/4 cup cornstarch
1/2 cup milk
Remove vanilla bean and cinnamon stick from the slightly cooled milk and stir the smooth cornstarch mixture into the milk. Cook over--not in--boiling water until it begins to thicken-about 10 minutes. Pour some of this mixture over: 3 beaten egg yolks
Return the egg mixture to the pan and cook, stirring gently, about 3 minutes. Beat in: 1 tbsp butter
1/4 teaspoon salt
Pour the thickened cream into a 9 x 9- inch buttered pan. Cool. Cut into diamonds or squares about 1-1/2 inches long. Beat: 1 egg
Dust cream with: Finely crushed bread or cake crumbs
Dip the pieces of cream in the egg, then again in the crumbs. Fry in deep fat heated to 370. Drain and roll in: Powdered Vanilla Sugar7
Serve at once sprinkled with: Rum
or with: A fruit sauce9
