Remove the frozen dessert or yogurt from the freezer and soften slightly; it takes about 10 minutes. Cut each graham cracker square in half (into rectangles) and set aside. Line a shallow pan with aluminum foil.
Assemble when frozen dessert or yogurt has softened: Place 2 tablespoons frozen dessert or yogurt on a graham cracker, cover with another graham cracker; compress the sandwich slightly. Set it on its edge and roll all sides in the Grape-nuts. Place the sandwich on the foil-covered pan and repeat. Freeze sandwiches until hard, then wrap individually in foil or plastic. Serve immediately after removing from the freezer, as they soften quickly.
