Fruit Kabobs

Ingredients

  • Apples -- unpeeled, cut in 1-1/2-inch (4 cm) wedges
  • Peaches -- unpeeled, cut in 4 wedges per peach
  • Bananas -- very firm, cut in 2-inch (5 cm) pieces
  • Oranges -- peeled, sectioned or cut crosswise into 1/2-inch thick slices
  • Pineapple -- cut into 1-inch (2.5 cm) chunks
  • Apricots -- whole and tender
  • Maraschino cherries
  • 1. 2 tbsp honey 25 ml
  • 2 tbsp lemon juice 25 ml
  • 1 tsp cinnamon 5 ml
  • 2. 2 tbsp orange juice 25 ml
  • 2 tbsp honey 25 ml
  • 1/2 tsp cinnamon 2 ml
  • 3. 2 tbsp melted butter 25 ml
  • 1 tbsp creme de menthe 15 ml

Cooking Instructions

Select firm fruits. Cut the softer fruits in larger pieces than the slow-cooking harder fruits. You may use 6-inch wooden skewers for individual servings or 18-inch metal skewers.

Heat up the marinades a little so they will blend together better. Brush on frequently during the cooking process.

Use a very hot fire and turn frequently for all kinds of kabobs. I suggest that you place them on the upper grill over high heat.
